Blue Cheese & Mushroom Bruschetta (Serves 2)

 

What you need:

Half a ciabatta
Clove garlic – cut in half
100g Cows & Co Blue Cheese, cut into thin slices
100g chestnut mushroom – sliced and sautéed in butter
Couple sprigs thyme
Seasoning

Method

Preheat grill
Slice ciabatta in half & cut into 4 fat fingers
Toast until nice & crispy – while hot rub with the cut piece of garlic
Top ciabatta with slices of cheese, mushrooms, thyme & seasoning (along with a bit of Worcester sauce if you fancy)
Grill until cheese is bubbling then serve – delicious!
