Posh Cheese & Ham Toastie

What you need:

  • 2 slices of a rustic loaf – here we used Sourdough
  • 3 slices of Cows & Co brie
  • 3 slices of pancetta, or alternatively a good quality ham
  • 1 dessertspoon apricot jam
  • 1 heaped teaspoon Dijon mustard
  • Olive oil
  • Seasoning to taste

Assemble your sandwich by layering together the cheese and ham, and then finish off with a generous slather of apricot jam and mustard.
Lightly brush olive oil over the top and bottom of your sandwich
Cook on a pre-heated griddle pan for approximately 3 minutes each side, until the cheese is melted and the bread is nice and crispy

with charred cherry tomatoes & watercress
