What you need:

  • Approximately 5 sheets filo pastry – defrosted to room temperature
  • 2 medium onions, finely sliced and gently sautéed in butter until very soft & golden
  • 150gm Cows & Co blue cheese, cut or crumbled into small pieces
  • 3 eggs, beaten together with 300ml milk
  • Seasoning


Brush a 12-hole non-stick muffin tin with oil to prevent filo sticking (v. important!)
Cut filo into squares – big enough to line the holes in the muffin tin, and overlap the edges generously
Line the muffin tin with filo squares, then brush lightly with oil.  Repeat this process until you have built up 3 layers of filo in each case
Pop in a preheated oven (180 degrees) for five mins to crisp the bases a little
Remove from oven and put a spoonful of onion into the base of each case
Sprinkle over half of the cheese then top up with the milk & egg mixture
Finish off with the remaining cheese and seasoning then pop back in the oven and cook for approx. 20 minutes until the filling has firmed up
Remove from the oven and remove promptly to avoid tartlets sticking
Delicious served hot or cold
